When most people think of coffee in Greece, they think of a freddo espresso by the sea — cold, strong, and drunk quickly before the sun gets too hot. That picture is accurate, but it is only part of the story. In Sithonia, and especially in Nikiti, something quieter and more considered has been happening for a while now.

Specialty coffee has arrived in Halkidiki. Not in the way trends usually arrive — loudly, with neon signs and oat milk latte art — but slowly, through a handful of places that decided to take the cup seriously. The Pattern Bistro in Nikiti old town is one of them.

What makes specialty coffee different

The word "specialty" has a specific meaning in the coffee world — it refers to beans that have been scored above 80 points on a 100-point scale by a certified taster, which means they come from a specific origin, were harvested carefully, and processed in a way that preserves their natural flavour. In short: the coffee you are drinking actually tastes of something.

At The Pattern, we work with Kudu Coffee — a Greek specialty roaster whose beans are chosen for what they bring to the cup rather than their price per kilo. What to order in Nikiti

If you are visiting Sithonia in summer, the obvious choice is a freddo espresso — two shots of fresh espresso, shaken with ice until cold and frothy. It is the Greek standard, and when it is made with good beans it is genuinely excellent. Our version uses a double shot pulled fresh, never pre-made.

If it is a cooler morning or you want to slow down, try the filter coffee. Brewed to order, single origin, served black or with a little cold milk on the side. It takes a few minutes longer and it is worth every one of them.

For something in between, the flat white — a shorter, stronger version of a cappuccino with a silkier texture — is one of our most ordered drinks year round.
